Greek Yoghurt Pancakes with Stewed Apples

It’s quite traditional in Germany to eat pancakes with stewed apples and this recipe has been adapted a little with Greek Yoghurt for an extra protein boost. Stewed apples are rich in Vitamin C and also pectin which is a form of fibre that has been found beneficial for healing the gut lining.
This recipe contains no added sugar, honey or syrup as all the sweetness comes from the stewed apples. If you like yours a little sweeter you can add some honey or brown sugar at the end.
Ingredients:
Pancake batter:
150g Greek yoghurt
3 eggs
100-200ml milk of your choice
150g flour (any)
1tsp baking powder
Stewed Apples:
4-5 medium sized apples
1 cinnamon stick
1 slice of lemon
Method:
Peel and roughly chop the apples and put in a pan, add enough water to cover the base of pan by about 1cm, add the cinnamon stick and lemon slice and cover with a lid. Simmer for about 10mins or until apples are soft then take out the cinnamon and lemon and mash up with mixture with a potato masher.
For the pancake batter whisk together the wet ingredients and then gradually whisk in the flour and baking powder until you get a smooth consistency that is not too runny. Add a pinch of salt. Heat some butter in a pan and use about 2 heaped tablespoons of mixture per pancake. Fry for about 2 minutes on each side over a medium heat.
To serve spoon some stewed apples on top and sprinkle with a little cinnamon powder.
